My search for the healthy-ish chocolate chip cookie has finally come to an end! After discovering this recipe at Detoxinista and trying several times, I ended up making several changes to end with a result that I have been waiting years for. The perfect cookie that is gluten free and vegan!
Growing up, my aunt would make the most amazing chocolate chip cookies. Filled with butter, sugar and chocolate chips; it was the right mix of sweet cookie with a salty kick both soft and moist in the middle, but a crunch on the outside. Those cookies are amazing, but I really wanted a healthier alternative. So happy that my search finally came to an end. So grab a bowl and here we go:
Warm the oven to 180c/350f
In a bowl
- 1 cup buckwheat flour
- 1/3 cup brown sugar
- 1 tsp vanilla extract
- 2 tbsp water
- 1/3 cup melted coconut oil
- A pinch of salt no more than 1/4 tsp
- 1/2 tsp baking soda
- 1/2 tsp apple cider vinegar*
Mix it all together then add 1/2 cup chocolate chips or chunks of a broken chocolate bar. Make into about 12-15 mounds and place them on oven paper or tray. Press the cookies down with your palm of your hand. Put the cookies in the oven for about 10 minutes. Let them cool for 15 minutes at least. Viola delish cookies that can be eaten the next day or put in the freezer.
*If the apple cider and baking soda do not make a fuzzing sound when put together then something is wrong. Probably baking soda is not fresh. Also do not use more apple cider then this amount or it really ruins the cookies. My first batch tasted horrible due to using too much and no one likes to waste a cookie!
These cookies are great as it has a buttery taste, but no butter. The sugar/salt ratio is just right. Not to mention, involves only one bowl so ultimate cleanup ease. The only issue is the cookies taste too much like the real deal that I have now eaten about 4 whilst writing this!
