Cookie Dough Squares: Vegan & Gluten Free

Out of nowhere, an urge came to bake something. Even more so out of nowhere, I thought oh let’s try a dessert with chickpeas. The result is a pure guilty pleasure. The original recipe calls it Blondie brownies, but lets call it what it is and it’s cookie dough in squares! A recipe from Ambitious Kitchen is never a miss, although I cut out any mention of salt.

So grab a bowl and hand blender. In the bowl add

  • 1 can chickpeas (400 grams) drained and rinsed
  • 1/3 cup pure maple syrup
  • 1/2 cup natural peanut butter (smooth)
  • 2 tbsp vanilla extract
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda

Blend all the ingredients together with a hand blender (I think a blender wouldn’t give it the same texture). When all smooth together, fold into the mixture with a wooden spoon 100 grams of pure chocolate pieces (at least 72% pure) to the mixture. Add the mixture to lined baking dish (8×8), you will need to spread it out evenly and smooth it over (I didn’t have the best patience for this as you can see from the picture haha). Put in a pre-heated oven at 180c. Leave it in the oven for about 22 minutes (depends on your oven). Let it cool on a wire wrack outside of the oven for about 15 minutes before cutting into squares. It makes about 9 big squares or 15-18 small one’s.

Can be stored in the fridge if you want them extra firm or out of the fridge. The real kicker is the clean up duty when you just lick the bowl, because it taste like cookie dough. Admittedly, I only mentioned the chickpea ingredient after my husband ate about 3!

It does taste a bit sweet, but I guess the chickpea’s pack in the nutrition factor. Not to mention these are vegan, gluten free and no refined sugar free. A winner!
