Chocolate Peanut Butter Fudge Cookies (gluten/dairy free)

With no plan to bake this weekend, dropping a peanut butter jar changed that. Not wanting the cracked lid to ruin the jar of peanut butter, I decided I needed to use the peanut butter at once. So cookies here were are. πŸ™‚

Very simple, set the oven at 350f/180c to warm up, just grab a bowl and wooden spoon Β and here you go;

In the bowl mix

  • 1 cup peanut butter
  • 0.5 cup brown sugar or coconut sugar
  • 1 tsp vanilla extract

Mix together until it is all incorporated then add to the mix;

  • 4 tbsp unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 egg

Mix all together until smooth and incorporated. Then on a baking sheet (I always use baking paper so no need to grease a dish) take heaping teaspoon’s full of batter and roll into a ball with your hands. You will get about 20 balls and they should all be able to fit on one sheet. Once the balls are all rolled and on the sheet. Press each ball down with a fork, be gentle.

Put the cookies in the oven and leave them there for about 8 minutes. Not any less and not any longer (unless you have a cooler oven). When you take the cookies out, they will still be crumble. Therefore, you need to let them cool for about 15 minutes so they can firm. Then you can eat them πŸ™‚ Enjoy!
