Vegan Meatloaf, a great dish for all occasions!

This one is a bit mind boggling if you have eaten real meatloaf with actual meat, as this recipe comes to a clear tie minus the meat. Served cold or warm for lunch or dinner, this dish is just a great one to keep in the fridge or freezer as a go to dish for a quick meal served with vegetables. It is also one of those foods that hides a lot of vegetables for those who are picky eaters. Without further a do!

200 grams mushrooms

1 white onion diced

3 cloves of garlic minced

2 cups cooked lentils (yellow or red)

2 carrots diced

1 celery diced

1 cup oats

0.5 cup oat flour (oats pulsed in a blender) or almond flour

1 tbsp oregano

1 tbsp thyme

2 tbsp tomato paste

2 tbsp soy sauce

salt to taste

3 tbsp water

oil to taste

0.5 cups organic ketchup

1 tbsp apple cider vinegar

1 tbsp mustard seeds

1 tbsp brown sugar (optional and depending how sweet your ketchup is)

In a pan, heat some oil. Saute the onion and garlic for about 3 minutes. Add the carrot, celery and mushrooms and sate for about 7-10 minutes. Put all the sauteed vegetables in a food processor, add 1.5 cups of cooked lentils and oats. Pulse the mixture until smooth, add water, Β oregano, thyme, tomato paste, soy sauce and salt. Pulse again until completely mixed and smooth (smooth= all pieces are about the same size). Take the top off of the food processor and stir in 0.5 cups of remaining lentils and the oat flour and mix together. Once all mixed, put into a loaf pan or use your hands to form a loaf and put on a baking tray.

Make a glaze by mixing in a small bowl ketchup, apple cider vinegar and mosterd seeds (plus optional brown sugar). Put half of the glaze on top of the ‘meatloaf’ and spread, also on sides if baking on a tray. Put in the oven at 190c/375f for 25 minutes. Add remaining glaze then cook for another 15 minutes. Then voila take it out, let it cool for a few minutes and cut into slices.

This is a dish you can serve with mashed potatoes or any vegetable. Or just simply eat it on its own. True comfort food.
