Vegan Cheesecake, a tofu wonder!

It has been about 8 years since I last made this vegan wonder when I was once a vegan myself, but it had its comeback last weekend when I needed to prepare a completely vegan meal for guests. The great thing about this cake is unless I mentioned I used tofu, not sure if anyone would have realized. Without further ado.

For the crust

150 grams of cookie of choice (I chose gluten free oatmeal cookies) or plain oats

1/3 cup melted non-dairy margarine

In a food processor or blender or simply using a hammer. Break the cookies into small pieces (or pulse oats into a flour). Once everything is in small pieces add the melted butter and put the mixture into a cake tin and line the bottom of the tin with the mixture. Put in a pre-heated oven of 180c/350f for 10 minutes. Take out and let it cool while you make the filling.

For the filling

2 blocks of plain tofu without liquid (about 400grams total or 14 ounces)

1 tub of vegan cream cheese (about 150 grams or 7 ounces)

1 tsp vanilla extract

1/2 -3/4 cup sugar (amount is up to your own tastes of how sweet you want the cake)

1/3-1/2 cup shredded coconut (optional and add amount suited to your tastes)

In the food processor or with a hand blender, pulse the tofu and vegan cream cheese until smooth. Add vanilla, sugar and coconut and mix until all incorporated and smooth. Put mixture into cake tin that has pre-baked cookie crust. Put in the oven for 40 minutes at 180c/350f then turn the oven off and let the cake stay in the oven for 30 minutes. Take the cake out and let it cool. Once cooled, add melted chocolate (90 grams pure chocolate with 1 tbsp margarine melted together) and berries to the top of the cake. Alternatively any topping you would like. Put in the fridge and chill for at least 4 hours. The cake will last for several days and suitable for freezing.

A big tip for any cheesecake real or fake is to use a spring form cake tin and do not remove theΒ form of the cake off until you actually want to serve the cake.

The great thing about this baby is you can make it exactly as you want it. See the above recipe as a basis, but use different types of cookies for bases, add cocoa powder to the filling or any other goodies and the topping is up to your imagination. This recipe leaves room for being creative. Enjoy!
