The best healthy (+gluten free) cookie around!

The stars aligned in my cookie world. I filled my cookie monster need with a delicious and easy to make gluten free cookie. Whilst I have made it my mission this year to improve on my photo skills. You know me, I am a busy young professional with a new husband and little time. If you need details and photos, the recipe idea came fromΒ Ambitious KitchenΒ , but below is the tried and true recipe with quite a few changes.

1 cup peanut butter

0.5 cups brown sugar

1.5 teaspoons vanilla extract

2 eggs

1 teaspoon baking powder

1.5 cups oats

100 grams pure chocolate

  1. First beat your peanut butter, brown sugar, eggs and vanilla with an electric mixer (or spoon if you need some exercise). I did this for about a minute.
  2. Add oats and baking powder and stir with a wooden spoon.
  3. Now here is a twist. By chance chocolate chips are impossible to find in this country, so I had to get creative, but the results were great. I put a chocolate bar (100 grams) into a blender thinking I would get chips…wrong. I got little pieces and shavings. I decided to go with it and folded the chocolate into the mix.
  4. Put spoon fulls of batter onto a cookie sheet and put in the oven at 350F/180C for 8-11 minutes (I needed 11 minutes).
  5. Cool and eat

Makes about 18 cookies and can be put in freezer

These cookies are great because they are not too dry. Most importantly the chocolate shavings brought a chocolaty flavor (not too chocolaty). It made the peanut butter come through as just a hint, which I find great as sometimes peanut butter can be overbearing. Of course, I also love anything with oats. This had it all and was healthy and gluten free (be sure to check your oats/powder to ensure it is gluten free). The biggest win was that my husband chowed them down without a clue how healthy they were!
